Chinese Curry Chicken
INGREDIENTS
6 tablespoons oil
1 medium onion, chopped
2 tomatoes, chopped
(Spice list)
2 tablespoons curry powder
2 tablespoons soy sauceÂ
2 teaspoons fresh gingerÂ
2 garlic cloves, minced
1 teaspoon chili powder
1 teaspoon ground tumeric
2-3 sweet potatoes cut into rounds
1 cup, chicken bouillon
1 tablespoon dry white wine
2 pounds boneless skinless chicken breast, cut into two inch pieces
salt and pepperÂ
PREPARATION
Heat six tablespoons oil in wok over medium heatÂ
Add onion and stir fry until translucent, about five minutesÂ
Add tomatoes and spice list and stir 4 minutes
Mix in potatoes, broth, and wine
Cover and simmer for ten minutesÂ
Add chicken; cover and cook until potatoes are tender and chicken is cooked through, about ten minutesÂ
Season to taste with salt and ground pepper.
