Chinese Curry Chicken


INGREDIENTS


6 tablespoons oil


1 medium onion, chopped


2 tomatoes, chopped

(Spice list)


2 tablespoons curry powder


2 tablespoons soy sauce 


2 teaspoons fresh ginger 


2 garlic cloves, minced


1 teaspoon chili powder


1 teaspoon ground tumeric


2-3 sweet potatoes cut into rounds


1 cup, chicken bouillon


1 tablespoon dry white wine


2 pounds boneless skinless chicken breast, cut into two inch pieces


salt and pepper 

PREPARATION


Heat six tablespoons oil in wok over medium heat 


Add onion and stir fry until translucent, about five minutes 


Add tomatoes and spice list and stir 4 minutes


Mix in potatoes, broth, and wine


Cover and simmer for ten minutes 


Add chicken; cover and cook until potatoes are tender and chicken is cooked through, about ten minutes 


Season to taste with salt and ground pepper.


Feel free to utilize other proteins such as beef or make it vegetarian.  This recipe was found on Epicurious and is definitely worth a shot.
